While working in the kitchen for celebrity chef Fabio Viviani, Fabio approached Adam and said, “You don’t stop talking about wine, and we need a Beverage Manager. I think you’d be great.”

Adam embraced the local Santa Barbara Wine Country just north of the restaurant, building lifelong relationships within the community and finding himself diving further down the rabbit hole of wine.

Adam’s next stop was the wine-centric community of Aspen, Colorado. There, he worked at many restaurants (including David Burke’s Aspen Kitchen, Hotel Jerome, and Jimmy’s), ultimately settling in at the iconic Aspen Casa Tua where he would take the wine program to new heights.

After starting a family, Adam decided to go back home to California and work with the wines that inspired his career 13 years prior. He now works with what he considers to be some of the best wines in the U.S. if not the world.

When he’s not tasting wine, Adam is spending his time riding bikes, disc golfing and being wrapped around his daughter’s little finger.
